Description

The Muthuuzuni Factory is located in Machakos, south-easy of Nairobi. Established in 1979, today it is made up of 1020 members who own an average of 0.5 hectares each. After the members harvest ripe cherries, they are delivered to the Muthuuzuni Factory and processed using a disc pulper, fermented for 24 hours, washed, floated to separate density, skin dried for a few hours, and then placed on raised drying beds to dry for approximately 14 days.
