Description
Chiapas is the southernmost region of Mexico. The mountains of this region span into bordering Guatemala and much of this tropical forest is the protected Triunfo Biosphere Reserve. This area is humid and tropical, inhabited by small farms of producers like Raul Roblero and Finca Hierva Santa. These smallholder producers take pride in their land, growing coffee organically through methods passed down from generation to generation. The strong influence of indigenous groups and cultures has long been the driving force behind the embrace of organic practices, as they are often in line with traditional growing philosophies and utilize similar if not the same techniques. Microlots from Mexico are farm-specific and sourced based on the cup quality; they represent the highest quality and grade of Mexican coffees.
